Pear and Bleu Cheese Tart

Since we have been asked to stay at home, I’ve tried to master baking bread. As much as I enjoy being in the kitchen, bread has always been tricky for me. My grandmother gave me a bread machine at a young age and I was a pro at making dough creations in that machine. Bring on the carbs! When we got married and moved in to our first home, somehow the paddle from the machine went missing in the move. I searched forever to find a replacement paddle for that bread machine with zero success.

With most grocery stores being out of bread products and the fact that I enjoy being a homebody, there’s no better time to master bread than the present. I got on the Food Network app and searched for pizza dough. With pizza being a family favorite and always having topping worthing supplies in the refrigerator, I felt that it was a good place to start. And if the dough tasted terrible, hey, there would be plenty of toppings to mask any failure!

With over 600 – 5 star reviews, I thought that it would be a good recipe to try. What made this recipe so easy was my awesome stand mixer with a dough hook that I got when I was 18. Here is the one I use: KitchenAid 4-1/2-Quart Ultra Power Stand Mixer, Grey.

I simply made the recipe linked above and wrapped my mixing bowl in plastic wrap. I let it sit for one hour, prepping it for dinner. We ended up ordering take out that night and I threw the bowl in the fridge and crossed my fingers.

The next day, I went to prep the dough and it was so fluffy! It was a yeast success! Below is the recipe that I created!

Pear and Bleu Cheese Tart

1/3 recipe of pizza dough (linked above)

3 tablespoons of olive oil, divided

1 garlic glove

1 cup mozzarella cheese

1 pear, I used Bartlett

1/4 cup Bleu Cheese

salt

pepper

balsamic glaze, use your own or what I used: Nonna Pia’s Classic Balsamic Glaze (12.85 Ounce)

Mixed Green Salad Topping:

2 cups mixed greens

2 tablespoons of good quality of olive oil

1/2 lemon

salt

pepper

Directions: Pre heat oven to 450 degrees. Take pizza dough and shape to the approximate size of 5 by 8 inches. Cover with tea towel and let rise for 10 minutes. Chop garlic and let sit in two tablespoons of olive oil. When dough is ready, brush on garlic and olive oil mixture. Sprinkle dough with mozzarella. Slice pear and arrange on dough. Place blue cheese over pears. Season with preferred amount of salt and pepper. Drizzle with remaining amount of olive oil. Bake for 10-15 minutes. While the tart is baking, arrange salad and balsamic glaze, if needed.

Remove tart from oven when cheese is melted and dough is browned. Allow to cool for 10 minutes. Drizzle over 1 tablespoon of balsamic glaze, cut in to slices and place salad in center.

Salad: toss salad with 1/2 lemon, olive oil, salt and pepper.

How to Set a Outdoor Dinner Table on a Budget

I love entertaining! Whether it is just a few girlfriends or several couples. I also like it to look a little different every time but with out spending too much money.

Right before we sold our first house I had several girlfriends over for a paint party. We were going to be on our covered back patio, because – let’s face it, paint!

Here’s my huge secret on outdoor entertaining….

GO TO THE DOLLAR STORE!!!

Yes, the dollar store. You can get awesome dinnerware there. And who cares if it breaks, IT WAS ONE DOLLAR! Make sure you keep to a color theme with the dinnerware. If one breaks, you don’t have to have an exact match, it just needs to fit the color theme you are sticking to. I chose white, black and green. Pretty simple and you can always find white.

For table covers, I used two square of brown butcher paper for each rectangle table. We were going to be eating then painting, and it made for easy cleanup. This party was around Thanksgiving so I took a black sharpie and wrote around the edges, “Grateful, Thankful and Blessed”.

For food, don’t always feel like you have to feed an army. People take ownership in the event when they are asked to bring something. For this specific event, I asked each woman to bring their favorite finger food – savory or sweet. It was a hit! I provided these chicken Parmesan sandwiches and my favorite party tea, recipe as follows:

Party Tea

-One bottle diet ginger ale

-One package of Crystal Light Peach Tea

Mix the two together and serve over ice!

I also gave away little party favors. Dollar Store, again, mugs! I created stencils with holiday themed words, traced it with a sharpie and then baked the mug in the oven to seal it. They were loved by all!

It was a wonderful night and much fun was had by all!

 

One of my Best Yeses

Growing up I could not wait to be a ballerina or astronaut or teacher. I had always wanted to be a wife and mother, but that was always second place to me. I had in my mind that only I could make myself a future that I was happy with.

Oh boy, was I wrong…

Speaking of boys – I mean men. In college, I fell head over heels for my husband. He was never a question of yes or a no; it was very clear that God had put him in my life. But that story is for a different time. A few years in to our dating, we started discussing marriage seriously. We both deeply loved kids and knew that children would be a part of our future. My future husband asked me, “If our lifestyle permits, would you please stay home with our children?” And be a ballerina or astronaut or teacher?? My mind was racing. But my heart was very much in love. So, I told him, if that was what he wanted me to do, I admire the decisions he makes and guidance that he has for our lives. So, yes!

I had no idea of what I was getting myself in to. My mom had always been a working mom and I was not familiar with the stay at home lifestyle. Do I get to wear pajamas every day? What happens if I’m not their favorite? How am I going to take care of my husband and myself if I only take care of kids all day? Some days I still have those questions, but they do not matter or they are not relevant.

There are a lot more things that matter more, now:

Being able to take both of my babies to bible study with me, where they go to a class too.

Taking them to go see their real favorite, their dad, at his office during the day. 

Taking my daughter to her first dance class.

And holding my little boy while he naps.

Earlier today, while we were in the car, I heard my little girl tell my baby boy, “Burky, you were SO good at your doctor’s appointment yesterday, I am so proud of you.” Well I am proud of them; they provide me with more joy than I could have ever imagined. Are there hard days? Yes, more than easy ones. But, every day is filled with love and admiration for one another.

I also do not believe that being a stay at home mom is the best “yes” for every family. A wonderful mother is a wonderful mother, and I admire them all.

When I told my husband “yes”, I did not realize that our future children were going to teach me more about myself than I was ever going to teach them. I know this time with them at home is short and temporary but I do my best to soak it all up.

Paint we Chose for our Farmhouse Barndominium

Interior paint…so many choices and so little square footage. Like I have said before we wanted to go for a traditional farmhouse look. I really wanted everything to be white, but I knew that with our kitchen cabinets and most of our trim being white – I needed to change things up a little!

Even though paint can fill like a full time commitment….until death do us part (AKA selling your home.) Paint is the easiest, cheapest thing that you can do to your home. So, take chances and make changes, you will be so glad that you did!

Five Irresistible Kitchen Faucets

When choosing a kitchen faucet you need to think about three things: style, function and color. You want the style to match the rest of your house – farmhouse, modern, craftsman or lodge. With function – do you want a sprayer? Something easy to turn on with nasty hands? Will my children be able to use this? And lastly, color. What color are your cabinet fixtures? Your door knobs in that room? Appliances? Try to find a color that will blend or match completely.
